I originally found this recipe for healthy green bean salad on SparkPeople, but I made so many modifications I decided it would be easier to just rewrite it. Here is their recipe with my changes.
Note: I served this along side a salmon fillet. It made a great combination.
Ingredients:
1 tsp butter
1 Tbsp grape-seed oil
1/4 tsp black pepper
1 scallion
14 oz fresh cut and washed green beans (you can find these in a bag in the produce dept at Winco, already washed and clipped)
raw sliced almonds (from the bulk foods dept)
2 Tbsp balsamic vinegar
Directions:
Peel and slice the scallion. Heat the butter and oil in a large skillet over medium heat. Add the onions. While the onions are cooking, semi-cook the green beans in a little water in the micro-wave. Add the pepper to the onions and cook for 5-10 minutes, stirring often, until the onions are golden brown. Add the balsamic to the pan and stir well to combine. Cook another 3-5 minutes. Add the almonds and the greenĀ beansĀ to the pan and toss to combine. Put a lid on the skillet and let the beans cook as desired. They are best if they are still crisp.
Serve this healthy green bean salad immediately.
